Momma's Munchies...Dessert! YUM!

I LOVE the idea that Lindsey over at Waking Up Williams had...it's a meme for swapping recipes.  AWESOME.  So because I have been a slacker and didn't get a chance to do it the past few Mondays, I am totally in today because it's all about desserts today!  YUM!

I asked Cort what dessert I should post and he immediately said, "BUCKLE!"  Blueberry Buckle is actually a recipe from my mom, and I have NO idea what it is called buckle since it's technically not one at all.  A buckle is really more of a coffee cake, but this dessert got the name and it stuck.



Blueberry Buckle:
The crust:  1 stick of butter or margarine
                 1 cup of flour
                 1/4 cup of brown sugar
                 1/2 cup crushed nuts (optional--I usually don't use them in case of allergies)
mix above together and put into a 9x13 glass pan.
bake crust at 350 degrees for about 8 minutes.  Then allow to cool completely


The filling:  8 oz of cream cheese--softened
                 2 1/2 cups of powdered sugar
                1-3 teaspoons of milk
                 1/2 teaspoon of vanilla extract
cream these ingredients together and spread on cooled crust


Top with about 1 quart of freshly washed blueberries and then cover with whipping cream (or cool whip if you're lazy like I am).


For a Fourth of July flair, you can add cut strawberries to the top making a red, white, and blue dessert.


I have TONS of blueberry recipes because my parents have blueberry bushes and they always have TONS.  So my mom and I have been perfecting blueberry recipes.  Although I will say this is probably a fan favorite with friends and family!

oh my word! that sounds sooo good! I'm definitely making this upon arrival to Oregon in a couple weeks ... with fresh blueberries picked from my parents' backyard! Can't wait!

Mmmm that sounds delicious! I wouldn't add the nuts since hubs doesn't like them...or maybe I just won't mention they are in there. This may be the dessert I make for the 4th!!
